week 4- Fried Rice and Teriyaki Chicken


Hi guys and welcome back to the blog, today we are making fried rice and teriyaki chicken. Now it is time for the recipe first, you will need many ingredients, chicken breast, mirin sauce, garlic, eggs, green onions, ponzu sauce, peas and carrots, rice, soy sauce, onion powder, oil, rice vinegar, brown sugar, teriyaki sauce, and of course salt.

First thing you need to do is to start the rice I'm not going to bore you with the details you already know from my pollo guisado blog, so basically you for every cup of rice you add one cup of water plus one and a half at the end so 4 cups of rice 5 and a half cups of water, once you put the water into the pot you add a tablespoon of oil and ¾ teaspoon of salt, add rice and put lid on top cook for 20 minutes. Once you have your rice cooking you need to start cutting your green onions until you have a half cup of chopped green onions. When you are done cutting your onions you need to start on your chicken first, preheat your oven 450, then you get your chicken and season it( i used three chicken breast) add salt and onion powder just enough where you can see it, cook for 15 minutes. Now we make the teriyaki sauce, First thing you do is add 4 teaspoons of soy sauce and teriyaki into a medium bowl then you add 2 teaspoons of mirin and two tablespoons of ponzu sauce, after that, you add 1 tablespoon of rice vinegar, 1 tablespoon and 3 tablespoons of brown sugar then stir. Once your chicken is done you put the sauce on top and put them in until done depending on the size of your chicken this could be longer or shorter. Then sear on the stovetop and walla your chicken is done. Now we fry the rice first, you need a medium pot and add 1 teaspoon of oil and 1 cup of rice after that let it sit and stir for a few seconds then add another cup of rice and “fry it” add a small bit of soy sauce and continue stirring, then add your vegetables and eggs then stir, make sure all of your rice is coated if there is any white rice keep stirring. Repeat this until all of your rice is done, then plate and top with fresh green onions.  I hope you enjoy and have a great rest of your day.
