Hello everyone and welcome back to my blog, if you are new I'm Anthony And this is my 20-times project. Today we are going to learn how to make tiger shrimp and tostones (smashed and fried plantains.) For this recipe, I went down to my grandma's house to learn all about how to make this.
First, the ingredients, Depending on how many people you have you will want that many plantains (the things that look like bananas) a few bags of colossal tiger shrimp and for the special dipping sauce later you will need cocktail sauce( any generic kind will do), horseradish sauce, and minced garlic. now since you are going to fry the plantains you will need any vegetable oil for the frying. and for the seasonings, you will need salt as always and old bay seasoning.

Now, this is what I meant by I was going to try and implement a new style of writing this blog, I want to try and make it more professional so that is what I am going to do.
- Now the first step is going to be to cut the plantain, you will need to cut the tips off of each side and slice the back as straightly as possible, once you have done this you want to use your thumbs to get all of the skin off.
- After you have done this you want to look at the shape and curve of the plantain you want to turn it so it's curved to the left and that's when you want to cut it diagonally, you want to do this because the diagonal cuts give the plantain more surface area.
- After that, you want to put oil into the pot to make sure it's about half the pot, turn the heat to medium-high.
- set out a platter and cover it with two layers of paper towel.
- Fry the plantains until yellow in color. Remember to turn off the heat.
- put the plantains onto the plater and crush them between two flat surfaces.
- Reheat the oil at medium heat, then you want to put them back into the oil and cook until crispy.
- Now its time for the shrimp, you want to deshell the shrimp.
- After that, you want to generously season with old bay and then flip the shrimp and season again.
- After that, you want to put a little oil onto the bottom of a large pot and set to medium-high
- once the pot is hot you can add your shrimp and cook for 1 minute 30 seconds on each side and then you are done.
- Now the special sauce- First you want to put about half a bowl( like the one in the picture) with your cocktail sauce
- Then spoon a spoon full of minced garlic into it.
- and then you add your horseradish, on our bottle you can squirt it out but in some, you might not be able to but use about a tablespoon of horseradish then boom you have the special sauce.
